    If you love peppermint and coconut then this easy recipe is for you. One change I made was to briefly chop the coconut in the food processor to make rice-sized pieces. This makes it easier to portion out bite-sized macaroons using a small Oxo cookie scoop. Baking time was reduced to 15-20 minutes. I also dipped the cookies in Ghirardelli white melting wafers and skipped the coconut oil. High altitude changes (6200'): none.
