Roasted shrimp & orzo from Barefoot Contessa at Home: Everyday Recipes You'll Make Over and Over Again (page 74) by Ina Garten

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

One of our favorite summer dishes

Absolutely delicious, so easy. My guests loved it. Loved that I could make it ahead and let it rest until it was time to eat. I used defrosted frozen shrimp and worked wonderfully.

This recipe has excellent flavor. I didn't make it ahead but now can see making it for company especially because it could have no last minute requirements. I used whole wheat orzo with good success. Just like Ina's French potato salad, the dill makes the dish so if tempted to use different herbs, it is best not to omit the dill (IMHO).

Thought it was really tasty. Cut into my cucumber and sadly it was bad, so subbed in chopped sugar snap peas instead. Think this could be a very flexible recipe - adding additional herbs, different vegetables, etc. It did feel like maybe it was missing a bit of spice, so next time may try some sumac or pepper.

I made everything except the shrimp one day ahead. Served over a bed of romaine lettuce, half the recipe served 2 people for dinner. It was very flavorful, but the red onion was a bit overpowering. I think you could use less feta and crumble it instead of dicing.

This recipe is fantastic! Cooking the shrimp this way leaves them succulent and delicious, plus the dressing matches beautifully with the rest. When I made this, I was so excited by the shrimp that I left out two major ingredients - the cucumbers and the feta. It was good even without them, but even better with them. Definitely a favorite.

My go-to picnic/summer potluck salad. Charming & refreshing.
