    This is such a great recipe for New Year’s Day or a summer barbecue. The pickling really brings out flavor of the black-eyed peas and hides what I find to be a certain muddy quality in these legumes. I made two changes: I pickled the red onion to bring out the pink color, and added a spoonful of cowboy caviar I’d made earlier this year. A keeper!
