Loaded baked potato and cauliflower soup from Healthyish: A Cookbook with Seriously Satisfying, Truly Simple, Good-for-You (But Not Too Good-for-You) Recipes for Real Life (page 106) by Lindsay Maitland Hunt

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

This kind of soup is all about the toppings, so it was fine that it’s a very healthy soup (no cream, just cauliflower and potatoes and onions). We roasted the cauliflower because roasted cauliflower is delicious, but I think that made it more of a cauliflower soup than a baked potato one? Next time I’d just make it as directed. But to be honest, I’m thinking that from this book, I should just stick with the broth soups— if we want what’s usually a cream soup, we should just make a cream soup. Tried two, and they were OK but not great.
