    This was the first recipe I’ve made from this cookbook, and it was very good. I used leftover chicken from a whole chicken I roasted yesterday. We liked the chicken, mashed avocados, and pickled onions combination. Will repeat. Very quick meal, especially if you already have the pickled red onions made.
