    A lovely hearty soup - simple and warming (though it helps to be in the mood for some chopping). I only had half the quantity of butternut squash so made up the difference with sweet potato. At the end the spiciness was quite mild so I added an extra teaspoon of Thai red curry paste for the final 5 mins of cooking. I felt it was also missing the distinctive Thai sour flavour so I added a squeeze of lime juice to each bowl.
