Can substitute bomba rice or Arborio rice for Spanish Calasparra rice, and white wine for dry sherry. Can use the book's "Carrot stock."

Accompaniments: Marinated carrots (Zanahorias en escabeche); Roast chicken with guindilla pepper sauce (Pollo asado); Trout baked in a salt crust with romesco, salpicón, and aïoli verde (Trucha a la sal con tres salsas)
