    Yes, I am fond of monastic cookbooks so I was delighted to see that this is indexed. This is a favorite eggplant tian, verging on an eggplant Parmesan. In the spirit of using the monastery cheese, I've been very happy with a number of cheeses - Parmesan, mozarella, asiago, chevre . . .
