Zero-degree chili from Feast by Firelight: Simple Recipes for Camping, Cabins, and the Great Outdoors (page 147) by Emma Frisch

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute shiitake mushrooms for beef stewing steak, vegetable broth for beef broth, sour cream for yogurt, and cilantro for parsley.

Definitely not what I would typically view as a chili. I’m glad the author compared it to a goulash in the notes. I had to take a couple of liberties with this. As I have never achieved tender stew meat in 45 mins, I sautéed the onion and peppers and then added and browned the beef. I added the tomatoes, broth and bay leaves and simmered all of this for over a few hours. During that time I added a tsp of Urfa pepper, an additional tsp of smoked paprika and 1/2 tsp garlic powder. Once the meat was tender, I added the beans, potatoes and carrots. Didn’t used canned. Used previously cooked Rancho Gordo Christmas Limas. The flavors are fantastic, giving 3.5 stars because the recipe is problematic as written.
