    Variation of slicing tomato and sprinkling a little arak on top ... you may resort to this before you finally get the main recipe correct. Take that as a suggestion you master the recipe before offering it to guests. If you make mayonnaise, you'll have little problem with the emulsification of the garlic paste. The problem is finding the right balance between tomato - garlic paste - sumac. You think you have it only to have the next tomato be much sweeter ... or the garlic has a bit more bite ... or ....but when you finally get it right, it was well worth all those not quite right trials. This is definitely a repeat ... many times.
