Can substitute cassia bark for cinnamon sticks, chicken breasts for chicken thighs, water for spice stock, and rapeseed oil or the book's "Seasoned oil" for ghee. Can use the book's "Garlic and ginger paste", "Spice stock", "Garam masala", and "Smooth mango chutney".
