Pears poached in spiced red wine (Poires pochées au vin épicé) from Tasting Paris: 100 Recipes to Eat Like a Local (page 236) by Clotilde Dusoulier

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute peaches or nectarines for pears, store-bought puff pastry for the book's "Easy puff pastry (Pâte feuilletée facile)" specified in this recipe, and store-bought butter cookies for the book's "Caramelized arlette cookies (Arlettes caramélisées)" specified in this recipe.

I made this with peaches instead of pears because it's summer, and the results were so good. Ate with a bit of yogurt because I couldn't find creme fraiche.
