Ginger-garlic paste from Masala Mamas: Recipes and Stories from Indian Women Changing Their Communities Through Food and Love (page 38) by Elana Sztokman and Masala Mamas

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

This recipe is very useful as it has variations for ginger-garlic that include onions, coriander, parsley, chile peppers, or spring onions. It also provides tips for cashew paste, almond paste ... i.e. pretty much any seasoning blend you use repeatedly. Vinegar serves as the preservative if you keep the paste in the refrigerator. The other option is to freeze them. Having premixed pastes for recipes with long lists of aromatics make recipes more approachable.
