Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    It helps to rest the mix for a bit before making the patties. I don't "form" patties. After the mix rests, I scoop out 6 lumps onto a plate, then heat the oil. When the oil is ready, I drop the patties in and they spread out to about 1cm thick on their own, forming well shaped burgers. Increase the spices by at least half and they will taste great. You can also oven cook them, about 15 minutes per side. Worked best on the "circu-roasting" setting that alternates grill heat with regular fan heat.

    Loved these although too sticky to shape. Think they were a bit too fat as still stodgy in the middle but tasted good and would have again. Used the 'Jane's mint raita' (from the same book) instead of mayo.
