Pineapple upside-down cake from The Cake Bible (page 92) by Rose Levy Beranbaum

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

#pudcbakeoff My 10" skillet only had a 9" bottom, so I used a 10" cake pan, making the topping in a saucepan. I could still only fit 7 slices of pineapple on top. I appreciated the extra pineapple, etc. around the edges. Baking time was 50 min. This cake was very attractive and we liked fresh cherries instead of maraschino. It was very moist, soft, and tender. One of our top two.
