    This has been our go-to Christmas dessert for years. After one of us went gluten-free, just switched over to using GF flour in the chocolate genoise and the result is virtually indistinguishable. We use Morello cherries (available seasonally at Aldi or Trader Joe's) - I've used sour cherries from the garden but the more tender canned texture of the Morellos is actually preferable as it's more "cuttable".
