Ten-minute lime cracker pie from Food52 Genius Desserts: 100 Recipes That Will Change the Way You Bake (page 159) by Kristen Miglore

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

This was a big miss for me, but my husband and daughter liked it. I think it's way too sweet. I was really hoping for something a bit more tart, more key lime pie-esque, but this was not it. I'm glad I made a half batch (in an 8"x8" square glass dish), but I won't be making this again.

I threw it out. First time that happened. Just did not like it.

I didn't like either the texture or the taste of this. I think if I had done a better job of distributing the filling evenly, the cracker texture would have been a bit better. But the flavor was off. I'm thinking I was tasting some sort of preservatives in the Ritz crackers or something. They tasted fine when eaten plain. Not sure. But this ended up in the trash.

Loved this. Similar to a Key Lime Pie in flavor. I think a creamsicle version with orange might be nice too, but it's pretty perfect as is. That said, it took me at least 10 minutes to zest and juice the limes, so maybe the 10 minute thing isn't strictly correct.

I reviewed the online recipe from Food52, but confirmed that the recipe in the book is identical. My family loved this.
