Viceroy’s cake (Postre del virreinato) from The Taste of Mexico (page 133) by Patricia Quintana

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

Cake must be refrigerated for 2 hours before serving.

I gave this cake four stars, only because of the level of difficulty. This was the most difficult thing I have ever made. Layering the cake inside a decorative pot or a giant trifle dish is the way to go! I subbed brandy for the sherry and that was good. I also added a layer of mushed cooked apricots mixed with booze.
