    Can substitute caramelised onion chutney for onion marmalade. Can use either beef or vegetable shredded suet.

    Had to make a few substitutions due to things I can't get here in France: I used grated butter instead of suet, Guinness instead of ale and some brown sugar instead of onion marmalade. I really enjoyed the dumplings: it took me some work (and extra flour) to get the dough to a rolling consistency, but they turned out well in the end. The flavour of the stew was very good, my only regret is that I think I added a little too much brown sugar so it was a bit too sweet: I think next time I'd just add a tiny sprinkling of brown sugar, and maybe also a tiny dash of balsamic vinegar (assuming again that I couldn't get hold of onion marmalade/chutney). The sauce was glossy and beautiful, and the beef was falling apart.
