    Great technique. May never do the stove-top simmer with pickling spice again. Oven braising is the way to go. Did not put the root vegetables in the pot. Roasted them instead. Placed the remainder of the Napa cabbage under, around, and over the wrapped corned beef. Used a bottle of Pacifico, two cups of chicken stock, and rinsed the broth box out with some water, instead of the beef broth called for in the recipe. The better-half really liked it.
