    I love this easy, practical and healthy recipe. It calls for one teaspoon salt, which doesn’t seem to be enough. Consider adding more salt as you go along. During the later steps of adding spinach then mushrooms, I cover the pot between additions so as not to lose liquid. Wonderful with chutney, mint and cilantro.
