    What a great use for 2 boneless chicken breasts! I used the spinach & sharp cheddar as instructed and added a seeded & chopped plum tomato. I am always a bit suspicious of using raw bacon in this kind of application...so I did chop & cook my bacon just short of crisp before mixing it into the filling. The result was 2 delicious chicken breasts with lots of filling thanks to the hasselback method of filling. A definite repeat.
