    Super yummy & a nice twist on the usual roasted veggies. The sauce & toasted coconut really make this dish interesting & special. I roughly halved everything to serve for 2 with a few leftovers, as a side for hubby with a teriyaki pork chop & a main for me. I think this would be a real crowd pleaser!
