    Delicious salad but the ingredient list is slightly insane! I left out the eggs and fresh herbs. I used vegan chorizo sliced in with the roasted veg and it worked well. The roast tomatoes are absolutely delicious. I think a scaled back version of this could be just as nice - roast tomato, spinach, yogurt, quinoa and pistachio would be my choice.
