Crispy, herby and lemony fishcakes with pea and mint dip from A Love of Eating: Recipes from Tart London (page 190) by Lucy Carr-Ellison and Jemima Jones

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

1 egg & a few breadcrumbs was nowhere near enough to get these to hold their shape. Especially if you don't break the fish up too much (as advised). Had to spoon into individual frying pans & even then they wouldn't turn over without disintegrating. The mixture did taste nice & the pea puree was a nice accompaniment to the bowl of fish, leeks & herbs! I had thought that might happen after reading the recipe, but as every other recipe I've done from this book has been fantastic, I decided, unwisely it turns out, to trust the authors on this. Won't put me off the book though as everything else I've tried has been lovely.
