    I never would have thought about using souls vide to cook the beans. Not having to soak the beans over night saved time and the beans turned out very flavorful and with no breakage. This gentler method might just become my go to. Mixing the garlic, lemon, salt and water also proved to be a potent technique. After the rest the Liquid had a strong lemony-garlic flavor without harshness. Not sold on the straining before use but it does keep chunks out of the humus.
