    To get the cauliflower crispy you need to cook it for a longer time between 25-30 minutes. And because this uses chicken breasts I added the chicken after the cauliflower had been cooking for 15 minutes. This left it wonderfully moist but cooked and not dry. I also added in 1 tsp nigella seeds, 1 tsp cumin seeds and 1 tsp coriander seeds at the final 5 minutes of roasting. Everything should be nice and crispy and golden brown! Top with raita as well as the pickled red onions and cilantro. Delicious!

    Liked how easy it was to throw together, and the chicken did not overcook. for next time, I will add salt before roasting, and will need to find a way to reduce crowding in the pan (when we doubled the recipe and used two sheet pans, it still steamed vs roasted, so there wasn't much brown caramelly bits we usually like from roasted cauliflower)

    Absolutely loved this dish. I also made the mayo recipe from the book and some flatbreads to go alongside.
