    This cake is beautiful! Light and airy with a pure maple flavour. It isn't quite as delicate as angel food cakes I've made using the traditional method but I gladly forgo that for this much easier technique. I used Robin Hood cake and pastry flour which, based on appearance, was a successful substitution.....my cake slice actually looks slightly more aerated than this photo.
