Spiced butternut squash & coconut soup with pumpkin seed bread from Clodagh's Suppers: Suppers to Celebrate the Seasons (page 112) by Clodagh McKenna

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I only made the soup but it was very tasty. Spicing was fairly mild and I think I prefer the punchier Thai versions of squash/coconut soups, but this made a lovely change and was probably more child friendly. I'd repeat this recipe but might add a squeeze of lime juice at the end for a bit of acidity. Perfect for an autumn evening.

One of the best soups I've had. I also love a puree soup because it's so easy to freeze and defrost for meal prep. Love this would definitely make it again!
