    I ended up adding some chopped tomatoes to this dish to bulk it out and make it wetter, as I was serving it with rice and was worried it would be dry. I think in doing this though I lost some of the smokiness of the aubergine. I think generally this is quite a simple dish that probably needs to be served with something else (other than just rice) in order to make a full, interesting meal of it.
