Chicken and coconut milk adobo (Adobong manok sa gata) from 7000 Islands: Cherished Recipes and Stories from the Philippines (page 93) by Yasmin Newman

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Chicken marinates for 3 hours. Can substitute rice vinegar for coconut vinegar, and ginger for turmeric.

This was very good but almost a little too sour. Still, the acidity made it addictive. Maybe it was the rice vinegar that I used instead of coconut vinegar. I will definitely make this again but try the tiniest bit less vinegar.

Used rice vinegar and ginger instead of coconut vinegar and turmeric. Marinated overnight, also I accidentally cut the chilies before adding them to marinade, which made things very spicy (also bird-eyes chilies are in the marinade which aren't listed in the ingredients list). Despite it being a bit too hot, we really like this, it had great flavor from the coconut milk with the vinegar. It's pretty easy to make so I can definitely see us making this again.
