    Making this recipe became a humorous exercise in portion control. 4 onions? Given the size of my onions, 2 filled my very large casserole a third of the way full. And it continued through the recipe - my sizes clearly didn't match their sizes. So I can only guess if my proportion of each vegetable is even in the ballpark of what was envisioned. I omitted the water, counting on the water in the vegetables to mix with the tomato juice to create the needed moisture. But this is certainly a thumbs up member of the regional ratatouille recipe club. Yes, I will be serving it on Easter.
