    5 stars. Made this for my boyfriend, who was craving "home." This recipe knocks it out of the park. The key is the razor-thin beef (I used ribeye with awesome marbling) and razor-thin onions. Literal comfort in a bowl with the plum vinegar pickled ginger (cut in matchsticks vs the sweet sushi ginger), spicy togarashi, scallions, toasted sesame. Used instant dashi with a little bit of beef bouillon because why not. Will absolutely make again.
