    Can substitute chicken stock for beef stock, and Chinese black mushrooms for shiitake mushrooms

    Very decent beef ho fun, it looked like too saucy at first, but once the sauce was thickened with the slurry, it was just about right. The leftover ho fun however, having absorbed more of the sauce, clumped together. I used gai lan instead of napa.

    This was satisfying beef chow fun. Had to use thinner fresh rice noodles and tamari for dark soy sauce. Added about tsp sugar to counteract the prominent soy and oyster sauce taste and mellow out the salty flavor. This does not work well as a leftover because the rice noodle does not hold up well.
