    An easy and tasty weeknight dinner. Like alexthepink I cooked the potatoes and peppers in a roasting tray in the oven instead of in a frying pan on the hob, though I pan-fried the salmon. I'll definitely steal the idea of cooking it all in the oven in future, so thanks for that!

    We'd been getting a bit bored of salmon, so this was a nice way to cook it. I put the potatoes and peppers in a roasting tin and bunged it in the over for half an hour rather than pan frying, then added the salmon on top for the last 10 minutes.
