Coffee fudge from Joy of Cooking (Sixth edition 1975) (page 783) by Irma S. Rombauer and Marion Rombauer Becker

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute ground cinnamon for almond extract, and hickory nuts for pecans.

Pretty simple to do. Strong coffee-almond flavor. Subbed a double amount of red vinegar for cream of tartar. Making as part of a traditional 6th wedding anniversary gift. Came out very soft in this humid July weather. Well liked but super sweet compared to the modern candies we had side by side.
