Recipe appears as a variation of "Oatmeal and cherry sandwich cookies." Can substitute pecan meal, sunflower meal, hazelnut meal, or additional gluten-free oat flour for almond meal; coconut oil for clarified butter; unsweetened applesauce for eggs; dried currants or raisins for dried cherries; Earth Balance vegan buttery spread for butter; coconut milk for heavy cream; and vanilla beans for a portion of vanilla extract. Dough must be refrigerated at least 3 hours.
