    Even though my cauliflower florets were fork tender after the suggested five minutes of boiling, they mashed up less than creamy and had a crunch in the bite after being combined with sour cream and buttermilk. Tasted great but didn’t look like photo at all. The photo also appears as if much more than a tablespoon of butter has been added and shows additional butter on top. My one tablespoon melted into the mashed cauliflower without any evidence of butter remaining- Interesting recipe photo styling. Next time I’ll try boiling longer to see if I can get more of a potato mash texture.
