    Most of the listed dried chiles (for Amá spice mix) can be replaced with chile powder.

    This was a winner for us. Don’t be intimidated by the prep of pickled onions and Mexican Salmorejo (other recipes in the book). Both are easy and can be made in advance, so this becomes a super quick side to put together. I pre-heat the broiler for a bit before putting in, so that it roasts in addition to browning the top.

    Broiling the Brussels sprouts did not work, I’d prefer to roast or to blanch and pan-char. But the combination of salmorejo, pickled onions and mint were outstanding.
