Peel-n-eat shrimp with chile and peanuts from Amá: A Modern Tex-Mex Kitchen (page 201) by Josef Centeno and Betty Hallock

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

The listed dried chiles (for Amá spice mix) can be replaced with chile powder.

Absolutely delicious, and very very spicy if made to the recipe. I tone down my Mexican sriracha with half the chiles, and made this without the other hot sauce and it was still quite spicy. But delicious! My family did not love the peel and eat aspect because they felt they lost too much of the sauce, so I might try this with tail-on shrimp next time.

Really good and you can scale the heat easily.
