    Can substitute store-bought massaman curry paste for the homemade version specified in this recipe, red onions for eschallots, fresh ginger mixed with lime zest for galangal, beef brisket for beef chuck, and lime juice or vinegar for tamarind paste.

    Delicious! Used the maesri tin curry paste as directed. Next time I will make a double batch sans potatoes and freeze it.
