    I think it's best if done as two omelets if serving for 2 people. I recommend using larger flakes of salt for the omelet as when we used fine seasalt, I found it too salty. I also recommend using white pepper. Also, don't add the salt until the last moment of cooking the omelet as salt impacts egg protein and will impact cooking.

    I really liked how it was instructed to cook the omelet. We had this over 2 days by saving the filling and making smaller omelets as we went. Delicious. Served with potatos
