Dried runner beans require soaking for at least 4 hours or overnight. Can substitute dried cannellini beans for dried runner beans; bay leaves for fresh bay leaves; branzino, dorado, bream, black bass, snapper, porgy, or pompano for sea bass; and dried thyme for thyme.
