    One of my kids wanted a beautiful dragon fruit, so that started a quest for something to make using it and ended up with this tart. My shortcrust didn't work well, but that may be due to the ambitiousness of using a perforated tart ring from DeBuyer that is abstract (read lots of angles), so it broke a apart and found its way into the vitamix to make some crumbs. Next, I didn't have mango, so we used passion fruit pulp. Our deconstructed effort was delicious and not overly sweet. The small tarts I was able to make using a silikomart airplus mold with success. I especially liked the fruity haupia-esque filling.
