Can substitute whole chicken for stewing chicken, dried thyme for thyme sprigs, water for chicken broth, heavy cream for whipping cream, and chervil for parsley. Can use the book's "Marie's chicken broth (Marie's kippenbouillon / Fond de volaille)" recipe.
