The book's "Chilli oil" called for in this recipe requires standing overnight, and the "Galangal powder" requires 5-6 hours to prepare. Can substitute rice bran oil for grapeseed oil, and bird's eye chillies for scud chillies. See recipe for suggested aromatics.
