Smacked cucumber in garlicky sauce (Liangban huangua) from The Food of Sichuan: A New and Updated Edition of the Classic Land of Plenty (page 106) by Fuchsia Dunlop

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute green cardamom pods for black cardamom pods, and cinnamon sticks for cassia bark.

Not bad. Though I prefer the versions with black vinegar in them. This was a bit sweet I made again in July 2024 without the sugar and it was much better

Regarding jardimc’s comment, note that this has a recipe within a recipe. The ingredients listed also include the ingredients required to make the sweet aromatic soy sauce on page 459.

I have a hard copy of The Food of Sichuan and the hard copy recipe lists 6 ingredients: Cucumber, salt, sweet aromatic soy sauce, garlic, chili oil and sesame oil. @eatyourbooks please remove the erroneous ingredients.
