Wontons in sour-and-hot soup (Suanla chaoshou) from The Food of Sichuan: A New and Updated Edition of the Classic Land of Plenty (page 380) by Fuchsia Dunlop

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

This is a recipe that refers to another, which refers to another. Not sure that the stock from the first recipe, which is where the pig trotters come into it, are needed. I think the dumplings from the first recipe (Dragon Wontons, p377) are just the wrappers, seasoning and filling ingredients. Then you add as per the Hot Sour Soup on p380 that this recipe is for.
