    I made another version of this using 100g of green lettuce from the garden. Added 2 tbsp oil to the mixture. Very good for wrapping various salads, with hummus, etc, you can stuff these with just about anything. Note to self: use the JO skillet for these.

    I made the pancake only and made a few changes. I used frozen kale from my allotment and added about 1 tbsp olive oil to the mixture before blending. I make lots of crepes and I found the consistency as written was far too thick so I thinned it with some additional water and milk. Surprisingly these did come out very green on the second side and tasted very good…(I made up an alternate filling with my garden pesto and potatoes). I think these would be great with the spinach and will make these again for sure.
