    This is really such a great book for tasty, easy, everyday cooking. This scramble was great. I would not have thought of adding beans to tofu scramble, but it gives it such a great texture. I agree re upping both the glaze and sweet potato!

    Very nice. Used carlin peas as black beans didn't turn up, which turned out to be great, and I will use them in future. For my preference, I would probably increase the amount of maple-sriracha "glaze" and the amount of sweet potato.
